Absinthe
The green fairy has arrived. Absinthe is making a triumphant return to the Denver drink scene after a nine-decade absence. This light green spirit developed a seedy reputation in the pre-Prohibition era because of a belief that it contained psychoactive properties. With the turn of the century came about a change in attitudes and absinthe has been making a comeback since the US ban lifted in 2007. Bars and restaurants around Denver have been adding the spirit to their cocktail menus and even including the traditional ways of preparing it with water drips and slotted silver spoons. Find absinthe at places like the Wazee Supper Club, Z Cuisine’s A Cote Bar, the Union Brasserie in Lakewood and The Absinthe House in Boulder.
